Marry Me Shrimp Pasta

 

Yields: 4–6 servings | Total time: 30 mins

 

Ingredients

  • 1 cup sun-dried tomatoes in oil, sliced (plus 4 tbsps tomato oil, divided)
  • 1 lb large shrimp, peeled and deveined
  • Kosher salt and black pepper
  • 16 oz rigatoni or penne
  • 4 garlic cloves, finely chopped
  • 2 tbsps tomato paste
  • ¼ tsp red pepper flakes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp Italian seasoning
  • 1 (5-oz.) pkg baby spinach
  • ½ cup grated Parmesan (plus more for serving)
  • Fresh basil leaves, torn

Directions

  1. Heat two tablespoons of tomato oil in a skillet over medium-high heat. Season shrimp with salt and pepper, and cook until pink, about three minutes. Remove and set aside.
  2. In a large pot of salted water, cook pasta until al dente; drain.
  3. In the same skillet, sauté garlic, tomato paste, red pepper flakes, and remaining oil for one minute. Add sun-dried tomatoes, broth, cream, and Italian seasoning. Simmer for five minutes.
  4. Stir in spinach until wilted, then add pasta, shrimp, and Parmesan. Mix until coated and glossy.
  5. Let it sit for two to three minutes before serving. Garnish with basil and extra Parmesan.
